The Scandalous Speech of Dr. Potts

I've noticed a couple of quirks in Dr. Pott's English:

When referring to the letter "w", Dr. Potts says  "double yuh" instead of "double you".  
She doesn't call a "u" a "yuh", so I'm wondering why there is such a clear distinction here.

Also, the word "Appellation" she pronounces it [ae pel - l ae t c I ə n] instead of   .
I've never heard it this way before. And couldn't find a sound clip simular to the way I've heard her say it.  The IPA doesn't do it justice.
